I just watched the cast commentaries to the DVD. It is really good. They tell you a lot of things about the shooting of the movie, and it is interesting to see their reaction to the final extended version.
My favorite part is where Billy is talking about how he picked up horse poo instead of the palantir by mistake.
Oh man...I have not watched anything extra on the EE edition besides the new scenes. I need to check them out.
Heck, I can't even remember if I watched both of the other cast commentaries.

I've watched the first hour or so on the ROTK, I am getting there. I used to watch almost everything by the first 2 or 3 days in which I bought it, I think I am slacking

Oh! You've never found the Easter Egg! They are fantastic, and the one on ROTK is by far the best. Put in the first disc, go the the Scene Selection area. Go to the very very last scene, and push the down button. You'll see a golden ring that wasn't there before. Push enter and enjoy!
