It seems as though this is really taking off in Europe. People are donating their bodies for pastination to the "artist" as an alternative to mummification and as a form of mortal/immortal exhibitionism.

No. I read about it in The Economist. It's in Taiwan right now. My weightlifting partner went to see it. He said it's interesting and educational, but gruesome. You can see how all the muscles in the human body work.
Where is the artistic expression in torturing and killing a defenseless animal?
The merit in that kind of expression is no more "artistic" than that of the torture and murder of a person. By the "artist's" reasoning, serial killers would not be committing a crime, but rather creating "art".

Didn't people used to have to pay some kind of penalty for committing crimes like the torturing of a cat? Now there's a worldwide debate on whether or not his acts of animal cruelty and murder is or is not art. It's truly despicable!
We have to draw the line somewhere. If killing a cat is considered artistic expression today, what will follow - The killing of children?
As far as I'm concerned, anyone who thinks this is art is just as guilty for the tortured death of the cat as the killer is.
