I went with the story on the life of Dumbledore. I've always wanted that.
I think that I would like to see the stories of Snape and the Marauders, and Lily all in one series. Because they are all so innertwined, I think.

Marauders seemed to have so much fun during their days at Hogwarts. It would be great to read about these days in the context of rising Voldemort's shadow... So Marauders would be my pick. After that she could write Dumbledore's story.
As I think writing another series in the HP world would feel like a sub-standard extension, I'm voting for Hogwarts: A History. It would answer all questions about the ancestry of the school, dating from the founders to near-present day. It could be Silmarillion-esque.

But Mike, Dumbledore is 150+ years old. He did a hell of a lot before Voldie Poo was even born. What about him defeating Grindewald? I think it would be a great story.
