This thread will take some time to put together. I will try to include as many magical creatures as I can.
KneazleCat-like creatures that have spotted fur, large ears, and a lion-like tale. They are very intelligent and can detect suspicious or unsavory people. The react unfavorably to such individuals. If a kneazle likes a witch or wizard, it wil make a great pet.
MOM classification-XXX
Thestrals -huge leathery winged horses with skeletal black bodies, dragon like heads, pupil-less white eyes. Thestrals are attracted by the smell of blood. They move very quickly through the air and have a superb sense of direction. Old superstitions say that they are bad luck. You have to have witnessed death to be able to see them. To those that have not seen death, they are invisible.

note Hagrid has tamed a herd and they pull the carriages at Hogwarts. The herd began with one male and five females. Hagrids' favorite thestral is a male named Tenebrus Dumbledore uses the thestrals to travel when he does not want to apparate. Hagrid most likely used a thestral to retrieve Harry when they first met.
House elves -They are short, have large ears like bats, and very big eyes. Males and females look alike, but the females have a higher and squeakier voice. House elves are generally owned by very old and very rich wizarding families. They are bound to serve the family, keep their secrets and obey their owners. Clothing is ususally 1 garmet. They can be freed only by their master presenting them with clothes. House elves love to serve. Being a free elf is considered shamefull. House elves are able to perform wandless magic. They can do their own form of apparation in places that wizards can not (Hogwarts).
Note Hermione Granger formed a society called S.P.E.W. Society for the Protection of Elvish Welfare. The mission is to free all house elves whether they want it or not. Hogwarts employs about 100 house elves.
Blast-Ended Skrewt -Hagrid bred these strange creatures by mating Manticores with Fire Crabs. The start out small headless creatures that smell like rotten fish, and are shelless lobster-like and can propell themselves with an explosion from their back end. They do not get along and kill others of their kind. As they mature they develope gray, shiny armor and resemble a cross between giant scorpions and elongated crabs. They still expelled fire from one end, although without heads it was difficult to determine which end that was. A blast can propell the skrewt in the opposite direction several yards. They develop stingers and resemble scorpions when fully grown. Their armour deflects spells and they will be over 10 feet long.
No MOM Classification exists as they are illegal animals.
Bowtruckle -a small pixieish creature that looks like it is made of wood. They have knobbly arms and legs, and have two fingers on each hand. Their flat faces are bark like and their eyes are brown like a beetle. Their maximum height is eight inches. They eat fairy eggs, insects, especially wood lice. They are also known as tree guardians because they dwell in trees that have wand quality wood. They will gouge out human eyes if angered with their sharp fingers but in general, they are peaceful creatures. It is wise to offer them food. They are found in western England, southern Germany, and Scandinavia.

Banshee -they look like women with floor length black hair, and skeletal pale green faces. Their screams can kill.
*note Traditional lore of banshees says that when the cry is soft, that the banshee is close. When it is loud it is far away. This does not appear to apply to banshees in the HP world.
Puffskein -found all over the world. They are spherical creatures covered in soft, custard-colored fur. It is a calm creature that enjoys cuddling or being thrown around. Gives off a low humming noise when happy. Occasionally, a very long thin tongue will come out of the puffskein and will search for food. They are scavengers. They are famous for their habit of sticking their tongue up the nose of sleeping wizards and eating their boogers. This habit has made them very popular with wizarding children and they are sought after pets in the wizarding world.

Kelpie - A Kelpie is a water Demon that is found in Britain and Ireland. It lives in water, and can take many shapes, although it most commonly appears as a horse with bulrushes for a mane. It lures unwary muggles or wizards onto its back by its harmless appearance, then dives straight to the bottom of the body of water it inhabits. It then eats the victim and lets the entrails float to the surface. The only way to tame a Kelpie, is to get a bridle on it's head with a Placement Charm, which makes it unthreatening and docile.
I like Kelpies.

Leprechaun (or Clauricorn) - a Leprechaun is a mischevious creature, found only in Ireland. It is smarter than a fairy and not as spiteful as imps, pixies or doxies, but is extremely mischevious. They vary in height from 2 to 6 inches and are green in colour. They live mainly in wooded areas, and like attracting the attention of Muggles, making them well known in childrens fairy-tales. They make a realistic-looking gold-like material, which vanishes after a few hours, to their great amusement. They eat leaves and bear live young.

Gnome - The gnome is found in Northern Europe and North America and is extremely common. It is a garden pest, which can be expelled buy swinging it in circles until it is dizzy and disorientated, then throwing it over the garden wall. They are up to a foot in height, with huge heads and long bony feet.

Murtlap -ratlike creature found in the Coastal areas of Brittain. It has a sea-anenome like growth upon its back. The growth can be pickled and eaten. When eaten, it promotes resistance to curses and jinxes, but an overdose will cause ugly purple ear hair. Murtlaps eat crustaceans and the feet of people who step on them.

Fwooper -An African bird with extremely vivid plumage. They may be orange, lime, pink, green, or yellow in color. Their feathers are used for fancy quills. They lay brilliantly patterened eggs. The song of a fwooper though pleasant will drive the owner to insanity. The Fwooper is sold with a Silencing Charm upon it, which will need monthly reinforcement. A license is required to own one.

Hippogriff - The Hippogriff has the body of a horse and the head of a giant eagle, with large wings sprouting from it's back. It is native to Europe, but is now found worldwide. On meeting a Hippogriff, eye contact should be held, and bowing shows good itentions. If the Hippogriff bows back to you, then it is safe to move closer, if not, the best thing to do is run. They can be tamed, but only highly skilled wizards should attempt this. The Hippogriff's diet consists of birds, small mammals and insects. They lay nests on the ground and will lay only a single egg, which hatches within 24 hours, and will be able to fly within a week.

Manticore -highly dangerous Greek beast. It has the head of a man, body of a lion, and the tail of a scorpion. As dangerous as the Chimaera, and as rare, the manticore is supposed to croon softly as it devours its prey. Theire skin repels almost all known charms and the sting causes instant death.

Chimaera -a rare Greek monster with the head of a lion, a goat's body, and a dragon's tail. It is vicious, bloodthirsty, and very dangerous. There is only one known case of a wizard successsfully slaying a Chimaera. The wizard fell to his death from a winged horse, he was exhausted by the fight. Chimaera eggs are classsified as Class A Non-Tradeable Goods.
