One of the major things is that the entire S.P.E.W/Dobby/Winky sub-plot has gone - it just wasn't important enough to be included in the film, and it's exclusion will probably only be mourned by only the most die-hard of fans as such. Heyman says "It's Hermione's issue. Not to say Hermione's [not important]. Hermione's a vitally important character. But you have to make some choices."
He continued by dropping another hint, "One piece of information we've put into another character, which feels perfectly organic [and] works. The story works perfectly without [the elf story]. And we consulted with Jo [Potter author J.K. Rowling] about it, and she was fine [with it]". One can't help but think that this extra information will be relevant to the sixth and seventh books.
