Has anyone else heard of this one? You get a few friends to make a few batches of cookies. Everyone does a different kind, and you get together and exchange cookies, so that you have a huge plate for Christmas filled with an assortment of cookies. This works well with candy too.

Yes, I've heard of that, Sherry. I think that we did that one year through church. It went over pretty well. Oh man... my waist is getting bigger just THINKING about all the "goodies" of this season.

O.K. I need help coming up with a Christmas menu. It is at my house this year, so everyone wants tamales. That part is done. We will have pork tamales and refried beans, but I am not sure if I should make a ham and the fixings, or just have a huge plate of sandwich fixings. We will be getting together around 2 or 3 if that helps. Oh, and there will be 10 adults. I would appreciate any suggestions.

For those of you who don't know what tamales are:
Tamales are made with masa (type of cornmeal dough with broth in it)red sauce with chili, and shredded pork, all wrapped in a corn husk and steamed.

Well, we usually have a boat load of shrimp up with my inlaws and the family. And just about anything else that you can think of. But, I just can't see shrimp and tamales being served together! Doesn't sound right. Just make a huge mexican food spread!!! That sounds good!!! Oh, a ham sounds good too though.

Yeah, Ron keeps teasing me that adding sandwiches gives something to the gringos.

Kris, we freeze the ones we can't eat in time. So, we might have some left for a visiting mod.

Sorry Mystic, you are just too far away to come over for tamales.

Oh, you were serious. I don't make cheesecake, but I do have a fab recipe. They make the best cheesecake and sell it at Smart and Final. It comes frozen.

Oh man, I miss tamales! I used to be able to buy them from the deli in grocery stores back in Colorado. Here in Florida the Spanish cuisine is primarily influenced by Cuba. It's so rare that I find tamales unless they're in a restaurant.
Do you have a recipe for them Sherry?
Every Christmas my sister makes a traditional Cuban roast of pork tenderloin that's injected and baisted with Mojo - a mixture of sour orange juice and garlic. We have a traditional side of black beans and yellow rice too. It's good, but man do I miss Mexican food!

Chel I do have a recipe, but it was my dad's own secret one. So, because I do not want to be haunted by him, I can't pass it on to anyone. Sorry. Heck, I don't even know where it is. I will give you a tip. Use New Mexico Chili powder in your sauce. It really helps.

My mother makes an assortment of junk food every year. She usually makes two or three different kinds of cookies, fudge, two or three different kinds of cakes, Pumpkin pie and Pecan pie, rice crispy treats...My mother makes enough junk food for Christmas every year to stock a candy store.
