I love their sour taste, I used to rip off a stick of rhubarb, wash it and eat it raw. It always gave me the pucker face.

That sounds like a good combination. I've never heard of mixing apples with it. I like plain rhubarb pies, but I also like it with strawberries. It's been so long sinse I've had any, I don't remember which one I like better.

Apple and Rhubard Crumble
Serves about 4 -6
Dice four apples and the same quantity of rhubarb into about 1-2 cm cubes. (depending on the size of the crumble dish you are making, you may want to par-boil the rhubarb before you put in the pie dish if it's a large dish, to ensure the rhubarb is cooked properly, if you're making for four or less people though, you don't really have to worry about it. )
Put fruit in bowl and add at least one cup of sugar, more if you have a real sweet tooth and a squeeze of lemon juice and mix well until all the fruit is covered in sugar.
Put fruit in lightly greased pie dish.
Crumble: (this is the most basic version)
two cups of plain flour, 100g butter, half a cup of sugar (or more to taste)
mash it all together with your fingers until you have sort of bread crumb looking texture, don't worry to much about consistancy, lumps make it more interesting.
pour crumble on top of fruit, chuck it all in the oven at 180 (I have no idea how to convert that to American temperature sorry) for about 40 minutes until crumble is golden brown on top and serve warm with cream or ice cream.
You may want to put a tray under the pie dish as juice from the fruit can pour over the sides of the pie dish during cooking, this helps give the crumble top the golden colour and is not a bad thing, but unless you enjoy cleaning your oven, then yeah, put a tray under it.
Variations:
You can use just about any fruit by itself or any combination of fruit you like, apple and rhubarb is interesting through becaiuse the tartness of the rhubarb contrasts really well with the apple. But any berries are good. 
You can add pretty much anything you like to the crumble as well: crushed biscuits, oats, brown sugar, some melted butter will give a lumpier consistancy.
If you want a base to make it more like a pie, any sweet pie pastry will do. I use a very basic flan pastry, will have to post the recipe later though, I don't know that by heart. | | Reply To this Message
